Organic extra virgin olive oil produced in the Alentejo region (Portugal) using olives of the Cordovil variety.

The harvest begins in early November. This ensures that the olives are picked at their peak of ripeness, resulting in a high-quality extra virgin olive oil with a distinctive character.

The olives are received and sorted by variety at the Esporão mill just a few hours after harvesting, and are processed immediately. Extraction is carried out using the cold-press method at a maximum temperature of 24°C to preserve the properties and aromas of the varieties that characterise this extra virgin olive oil.

On the nose, it presents an intense green fruitiness with marked herbaceous notes and aromas of freshly cut grass, artichoke and aromatic herbs such as basil. On the palate, green notes predominate and it is slightly spicy and bitter, complex and harmonious, with a nutty aftertaste.

Food pairing: This extra virgin olive oil is very versatile and ideal for accompanying salads, toast, soups, white fish such as cod, or tapas.
