The olive oils produced in the province of Madrid are mainly developed using the Cornicabra and Manzanilla varieties.The area of production, processing and packaging is located in the natural regions of Las Vegas, Campiña, Suroccidental, Southeast area of Lozoya-Somosierra and Metropolitan Area of the Community of Madrid.
