Olive oil from Extremadura
Extremadura is the community in Spain which produces the third largest amount of olive oil, after Andalusia and Castilla La Mancha. The main variety used in the north is Manzanilla Cacereña, which produces sweet and fruity olive oils while in the south, in the province of Badajoz, the Morisca, Carrasqueña, Cornezuelo and Verdial varieties are the ones most used and are noted for their intense bitterness and spicyness.
