Extra virgin olive oil produced in the Alentejo region (Portugal) using olives of the Azeiteira, Cobrançosa, Cordovil, Frantoio, Galega and Picual varieties.

The harvest begins in October and continues until the end of November. This allows different varieties of olives to be harvested at various stages of ripeness, resulting in a complex and harmonious extra virgin olive oil.

The olives are received and sorted by variety at the Esporão mill just a few hours after harvesting, and are processed immediately. Extraction is carried out using the cold-press method at a maximum temperature of 24°C to preserve the properties and aromas of the varieties that characterise this extra virgin olive oil.

On the nose, it presents an intense green fruitiness with marked herbaceous notes and aromas of freshly cut grass, tomato plants, green tomatoes and banana peel. On the palate, it is elegant, balanced and complex, with a smooth entry and subtle, well-integrated hints of piquancy and bitterness. A persistent aftertaste with hints of green nuts.

Food pairing: This extra virgin olive oil is ideal for accompanying cooked vegetables, asparagus, gazpacho and grilled meats, as well as for finishing off a baked dish or for dipping bread.
