BIKURIM Sierra las Villas is the ultimate expression of the quality offered by the Sociedad Cooperativa Andaluza San Francisco. It is a limited-edition premium extra virgin olive oil made from the first olives of the harvest, sourced from mountain olive groves situated in the stunning setting of the Cazorla, Segura and Las Villas Natural Park.
The olives are harvested in early November, at the optimum stage of ripeness (veraison), when the fruit changes colour from green to purple. At this stage, the fruit yields its best juice, without losing any of its aroma or flavour, unlike in late harvests.
At the Sociedad Cooperativa Andaluza San Francisco, they prioritise quality over quantity, as at veraison the fruit does not yield the highest quantity of extra virgin olive oil, but it does offer the highest quality and a greater concentration of polyphenols.
As it comes from a traditional mountain olive grove, this gives this Picual olive oil unique characteristics of freshness and complexity. On the nose, there is a predominant intense fruitiness of fresh green olives. There are also prominent notes of freshly cut grass, olive leaves and tomato plants. On the palate, it has a clean flavour, with a balance between bitterness and a medium-to-high intensity of pungency. It leaves a pleasant aftertaste and a sensation of aromatic complexity.
Serving suggestions: This extra virgin olive oil is highly versatile and perfect for enjoying with toast, tomatoes, grilled green asparagus, barbecued artichokes, leafy green salads, fresh cheeses, and as a finishing touch on meat, fish and seafood.
BIKURIM Sierra las Villas has won national and international awards at some of the sector’s most prestigious competitions, such as IberOleum, London IOOC, Evooleum, Athena IOOC, Expoliva and Terra Oleum.

The Cooperativa Andaluza San Francisco is located in the town of Villanueva del Arzobispo (Jaén), in a unique setting next to the Cazorla, Segura and Las Villas Natural Park.
A privileged location where, since time immemorial, olive groves have been cultivated and extra virgin olive oils of exceptional quality have been produced. Surrounded by a predominantly mountainous olive grove, its oils possess a distinctive character compared to those produced in other geographical areas.
Quality is prioritised over quantity. The harvest begins in early November, at the optimum moment of ripeness, when the olive changes colour from green to purple (veraison). The aim is to obtain a product of the highest quality, which results from pressing the olives at this specific stage of ripeness. The native olive variety is Picual.
The Cooperativa Andaluza San Francisco boasts state-of-the-art technology at its facilities, enabling it to produce over 8 million kilos of oil each harvest, of which only 400,000 are bottled under its Sierra las Villas brand. It also produces premium extra virgin olive oil from an early harvest and limited production under the BIKURIM brand.
The quality of BIKURIM has been recognised nationally and internationally in leading specialist competitions, such as Terra Oleum, Olive Japan, Athena IOOC, Expoliva, IberOleum and Evooleum.
