The salt crystals produced in the Añana Salt Valley are renowned for their purity, the result of a traditional process and the origin of the raw material. The brine, created naturally when freshwater flows through seams of solid salt over 200 million years old, is harvested by hand by the salt workers. 

The salt crystals, known as salt flowers, gradually grow under the effect of the sun and wind before falling and being collected. The benefits of Añana salt have been internationally recognised since 1851. The salt workers received an honourable mention and a bronze medal at the Universal Exhibition in London. 

As well as being produced in a cultural landscape rich in history, this salt is beneficial to health thanks to its natural balance of minerals and trace elements. What's more, its ability to enhance the flavour of food means that less salt can be used to achieve the desired taste.

The Valle Salado in the town of Salinas de Añana, in Alava, Basque Country, is an unusual landscape in the process of recovery, made up of thousands of platforms or threshing floors, canals, wells and warehouses. Añana salt is the result of the natural evaporation of brine from springs, and its crystallization is the fruit of three factors: the sun, the wind and the traditional techniques of the salt-makers.
