Herriza de la Lobilla Lechín & Acebuche is an organic extra virgin olive oil Coupage with a distinctive character that combines two unique, centuries-old varieties: Lechín and Wild Acebuche, resulting in a product that is unique and unlike anything else on the market.
It is an ultra-premium extra virgin olive oil with a high content of polyphenols and phenolic acids. More than just an oil, it is a medicinal source of natural antioxidants.
The olives used to create this blend come from the heart of the Herriza de la Lobilla estate in Osuna (Seville), home to centuries-old Lechín olive trees and wild Acebuche trees, some of which are over a thousand years old.
The olives were harvested by hand under the light of the full moon during the first few days of October, prioritising quality over yield in order to produce the highest-quality extra virgin olive oil possible. The oil is cold-pressed at 21°C to preserve its beneficial compounds and organoleptic qualities.
It is presented in an exclusive limited-edition bottle (only 1,527 units), hand-numbered, and is launched at the start of the new harvest, which begins with the hand-picking of these unique wild olives surrounded by aromatic plants growing on the Herriza estate, under the October full moon, just as the olive growers of Roman Baetica did.
A unique extra virgin olive oil whose production depends each year on the weather and the soil of the Herriza de la Lobilla region, and which was named The Most Exclusive Olive Oil in Europe in 2021.
Bright golden-green in colour, it is very fresh and full-bodied on the nose, with aromas of green olives, olive leaves, freshly cut grass, wild olives, aromatic herbs and hints of apple. On the palate, it has a powerful attack, with the bitterness imparted by the Acebuche variety noticeable from the outset, persistent and very green. The spiciness is also particularly intense, remaining present with a long finish. A rather complex, majestic and astringent extra virgin olive oil, ideal for palates seeking very intense flavours.
Food pairing: The strong character of this extra virgin olive oil makes it perfect for pairing with a wide range of dishes. Try it with leafy green salads, tomatoes or grilled vegetables, grilled red meats, cured meats and mature cheeses, gazpacho or salmorejo, and fish.

Herriza de La Lobilla was founded in November 2018 by Álvaro Pallarés as a small, meticulously crafted project, producing limited editions designed for those seeking a unique, distinctive, intense extra virgin olive oil with its own identity.
In 2019, the Pallarés family founded Oleico Pallarés S.L. and acquired an oil mill in Osuna (Seville), transforming it into a boutique micro-mill. They are now based in a geographical location that is unique in the world. An area which, thanks to its climate, agricultural conditions and soil quality, makes it an unbeatable location for growing olive trees and producing the authentic, age-old liquid gold.
From that point on, the objective was very clear: to produce extra virgin olive oils of the highest quality, controlling every detail, from the moment of harvest, through milling and storage, to the selection of batches.
All this hard work soon began to bear fruit. In 2020, Herriza de La Lobilla Lechín & Acebuche was recognised as the Best EVOO Blend in Andalusia by the Higher School of Olive Oil (ESAO), confirming that the project was not just a promise, but a reality.
In the years that followed, Oleico Pallarés continued to win gold medals and prestigious awards in numerous national and international competitions, such as Evooleum TOP10, Athena IOOC, Berlin GOOA, IberOleum, the Dubai Olive Oil Competition and the Los Angeles IOOC, establishing itself among the most exclusive and highly regarded oils on the market.
