La Rous is the purest expression of the high-altitude vineyard at Dehesa El Molinillo. Made entirely from Cabernet Sauvignon planted on a stony plain of Quaternary origin, it matured slowly, exposed to extreme temperature contrasts and a climate that makes each harvest unique.
The 2023 vintage was one of the most atypical, with unusual rainfall and an extreme summer that required precise management of the vineyard. The result is a wine of vibrant freshness, with notes of redcurrant, red plum and subtle spicy touches.
Its ageing in barrels adds texture and complexity without detracting from its precision. On the palate, it is lively, with tense acidity and a long, elegant finish. A gastronomic wine, with character and authenticity, reflecting the uniqueness of its origin.
Food pairing: This wine pairs perfectly with oily fish, mild meats or poultry, medium-strength cheeses, seafood paella, ceviche or tabbouleh.

The olive grove at Dehesa El Molinillo covers 230 hectares and stretches as far as the eye can see. To achieve this, one only has to look back and produce it as it has always been done: allowing each olive tree to express itself with total freedom.
