Summa Varietalis is a Blend of extra virgin olive oil produced in Canena (Jaén) and composed of olive varieties from different countries in the Mediterranean basin, which were replanted in the Castillo de Canena Varietal Garden.
As it comes exclusively from the Castillo de Canena Varietal Garden, production of Summa Varietalis is limited. Each harvest yields an average of 2,000 bottles.
All the varieties share the same ‘terroir’: climate, soil, altitude and cultivation methods. Yet, at the same time, they retain their own original sensory characteristics. Each vintage of Summa Varietalis is composed of varieties which, in the opinion of Castillo de Canena’s Blend Master, stand out in that harvest for their organoleptic profiles. That is why each year’s Summa Varietalis is unique.
The olive varieties comprising this Blend in 2026 are:

- Cornicabra, from Castilla-La Mancha (Spain)
- Villalonga, from the Valencian Community (Spain)
- Leccino, from Tuscany (Italy)
- Frantoio, from Tuscany (Italy)
- Maelia, from Galilee (Middle East)
- Taggiasca, from Liguria (Italy)
- Koroneiki, from Crete (Greece)
- Zaity, from Aleppo (Syria)
- Galega vulgar, from Alto Minho (Portugal)
Summa Varietalis is a special tribute from Castillo de Canena to the olive tree and its presence and importance in the Mediterranean region. In 2009, they decided to create an orchard on their estate where 15 different varieties from various Mediterranean countries grow side by side. Summa Varietalis is a truly unique Blend of some of these varieties.
It is presented in an elegant opaque black glass bottle, which conceals within it a golden-green oil with an intense fruitiness, notable for its freshness. On the nose, a unique green and fruity harmony is perceived, which develops gradually as you taste it. On the palate, the smooth entry transforms into a wonderful experience enriched with sweet fruity notes and green notes at the same time.
The richness of an apple compote and other ripe fruits, along with the delicate sweetness of honey, come to the fore, creating a harmonious dance of flavours. This includes the juiciness of tropical fruits such as mango and pineapple, intertwined with green tomato and nettle in the background, followed once again by more mature notes such as red apple and sweet almond.
Serving suggestions: This extra virgin olive oil is perfect for purées, pulses, fish, roast potatoes and fresh cheeses.
Castillo de Canena is a distinct and unique company, as it is involved in the whole process of creating extra virgin oils, from the trees and the land to its commercialization. Our olive groves are carefully supervised and cared for in their different annual agricultural tasks. Our olives are selected at the optimum moment for their collection by hand, and be respectfully transferred to our mill. This guarantees the quality of flavors and aromas, supported by facilities already in the process of ISO 22,000 certification.
More than 75 people make up our team; managers, field experts, farmers, masters of oil mills, quality controllers and processes in the mill, economists, management and administration personnel, commercial executives, etc.
