Premium extra virgin olive oil from early harvest and cold extraction produced in Castellar (Jaén) with Picual variety olives.
It stands out for its green colour on the first day of harvest. It is an extra virgin olive oil with an intense green fruitiness. It has aromas of green olives, olive leaves and grass, as well as fruity notes of green apple and almond, and hints of vegetables such as tomato and artichoke. On the palate, the green olive and grass flavours are accentuated, and it has a clearly perceptible and very balanced bitterness and pungency.
Recommendations for use: This extra virgin olive oil can enhance a wide variety of dishes. It is recommended for use uncooked, especially with mild cheeses, pickles, salads and toast.
Ayozar has been awarded the 'Gran Mezquita' Prize and the 'Mezquita Oro' Prize in Spain and the Great Gold Medal ‘VIRTUS’ in Portugal. It has also been a finalist in the ESAO Awards for Best EVOO in Andalusia.

The history of Aceites Ayozar is a story of lineage, tradition and courage.
Its oil mill, managed by the family since 1947, has witnessed generations dedicated to olive growing. In 2001, a new era began, marked by modernisation and the constant pursuit of excellence, with the oil mill moving to the heart of Castellar and its facilities being completely renovated.
In 2012, Aceites Ayozar received the Rural Quality Mark of the County of Jaén, in recognition of its commitment to excellence and the rural territory.
Today, a team of courageous women has decided to take over the oil mill and continue to build on the family legacy. This generational change also represents a commitment to valuing women, as they have been the silent force behind the agricultural economies of many families in Jaén for decades.
