Organic extra virgin olive oil of early harvest and cold extraction produced in Alcalá la Real (Jaén) with olives of the Picual variety harvested in October.
The olives are taken to the factory every hour and go straight to the mill without being stored in a hopper, preventing oxidation and ensuring an extra virgin olive oil full of freshness. Its first cold extraction at 18ºC preserves all its aromas, properties and polyphenols.
Emerald green in colour, the nose reveals a fruity green olive aroma with hints of herbs, tomato and artichoke, along with more mature notes of fresh fruits such as apple and green banana. On the palate, it has a smooth attack, reminiscent of the aromas, followed by a slight bitterness and a progressively spicy finish. Good structure and persistence.
Food Pairing: This extra virgin olive oil is ideal for consuming raw. Its intensity enhances the flavour of cold meats, ham, cured beef and cheeses. It is also perfect for making sauces and emulsions, as well as accompanying boiled vegetables, fish and pasta.
UnOlivo's story is one of tradition, love and respect for olive groves and the environment. It is the legacy left by men and women who have poured their love for the product into the countryside; their passion for reviving the customs of yesteryear; their desire to produce a great organic extra virgin olive oil using traditional methods, listening to the wise whisper of nature.
The first steps of UnOlivo can be traced back to the beginning of the last century. In 1900, great-grandfather Julio was a well-known olive oil broker in Castillo de Locubín, in the Sierra Sur de Jaén. He bought oil from local producers and sold it in the Port of Motril. He was known for his entrepreneurial spirit, and for years he prospered thanks to his determination. With the outbreak of the Civil War, this visionary had to abandon the business and take on other occupations.
But his fighting spirit, his passion for olive oil and his respect for what the land produces did not disappear, and they reappeared 20 years ago through the grandson of that entrepreneur, Julio Gallardo. He was the one who revived the spirit of his predecessor, but he went one step further by launching himself into olive oil production. His efforts bore fruit, giving him the courage to take on the next challenge: setting up his own oil mill, where UnOlivo would be born.
The legacy continues thanks to the fourth generation, led by Elisabeth Gallardo. The enthusiasm and knowledge of this group of young people has been channelled in two directions: firstly, to influence different aspects of the production process in order to produce high-quality olive juices (classified as extra virgin organic); and secondly, promoting the marketing and awareness of the benefits of this product, thus conquering palates around the world (Spain, Germany, China, Colombia, Chile, France, etc.).
The goal of obtaining the highest quality olive oil had to go hand in hand with a solemn respect for the countryside, the environment, and everything that this great source of natural wealth, from which the family's oils are born, represents. UnOlivo committed to organic farming, taking it to its highest expression, respecting the environment to the utmost and seeking the perfect balance with all the beings and elements that form part of it.
UnOlivo oils are produced by pampering the land, listening to the moon and the stars, and observing the cycles of the day and the seasons. It is a cultivation technique that revives ancestral customs and, from a spiritual dimension, seeks a harmonious balance between man and the earth. This is surely another step in the story of old Julio. His family will continue to add pages to this long life of passion for extra virgin olive oil.
