Hand-picked, followed by destemming and gravity transfer to fermentation tanks. Prolonged maceration for up to 4 or 5 weeks and ageing in new and semi-new French Allier oak barrels for 12-15 months in a climate-controlled ageing cellar.
Intense apricot red colour, very well covered with layer, typical of a long-lived wine. Complex aromas, skilfully combining ripe fruit and spicy, balsamic and floral (violet) notes. On the palate it is powerful, well-balanced and flavourful, silky, with soft acidity and an abundance of ripe tannins, giving way to a meaty and velvety mouthfeel.
This wine is the ideal companion for roasts, duck, red meats and game. It is recommended to decant and serve immediately at 15-17ºC in large glasses.
