Intense green colour, bright with golden highlights. The nose reveals intense green olive fruitiness and ripe notes. It is very complex in aromas, both fruity and herbaceous. Aromas of aromatic plants, artichoke, green pepper, rocket leaf, bitter almond and autumn fruits such as blackberry stand out. There are also toasted notes reminiscent of cinnamon and freshly roasted coffee. The attack on the palate is fruity and all the notes perceived on the nose are also present. The bitterness is medium and the spiciness is somewhat more intense and progressive. Almondy and persistent.
Food pairing: This extra virgin olive oil is ideal for tasting raw and creating delicious combinations with products such as mature meats or cured fish. Perfect for those seeking an intense and prolonged taste experience.
The quality of Dehesa El Molinillo has been recognised in specialised competitions such as Sol D'Oro, CINVE and IberOleum. In addition, its single-varietal Coratina was distinguished as the World's Best EVOO and Healthiest EVOO in the World in 2024 by the prestigious Evooleum Guide.
In the town of Retuerta del Bullaque, part of the Montes de Toledo mountain range, surrounded by lush natural beauty, time seems to stand still, inviting reflection. To discover this place is to find a refuge for the soul, a connection with nature at its most ancient.
Dehesa El Molinillo is a model of balance that generates natural resources while maintaining biodiversity and creating a symbiosis between nature and humanity. It is a space where life and landscape intertwine, demonstrating that it is possible to live off the land without compromising its future.
The olive grove at Dehesa El Molinillo covers 230 hectares and stretches as far as the eye can see. Thousands of centuries contemplate this land that today is home to countless centuries-old olive trees, always cared for with the utmost respect. An organic crop in which each tree, each olive and the fruit extracted from it are treated with absolute veneration. To achieve this, one only has to look back and produce it as it has always been done: allowing each olive tree to express itself with total freedom.
In addition to the olive grove, there is an organic vineyard at altitude on clay soil where the vines live in conditions marked by an extreme climate, with wide temperature differences and the hours of sunshine necessary for complete and balanced ripening. A vineyard that gives the wine its unique identity. A vineyard that reflects the unique character of this environment, as hostile as it is welcoming. A vineyard with soul.
In the heart of Dehesa El Molinillo, where nature follows its course in harmony, they also produce honey that is a celebration of life, a genuine expression of the land, of its origins. Honey that follows a completely natural process, allowing them to capture the essence of a privileged environment.
