A vinegar made from the finest aged wines, using the ‘criaderas y soleras’ method, with the Pedro Ximénez variety, under a flor yeast layer. Produced by Bodegas Robles, a Cordoba-based company that works with the same passion as Claramunt.

It is a structured vinegar with sweet notes, typical of the Pedro Ximénez variety. Furthermore, the touch of flor yeast lends it depth and elegance. On the nose, aromas of ripe grapes, dried figs, dates, toasted nuts and wood stand out. On the palate, it has a smooth and slightly sweet attack, with balanced acidity and great richness. It is well-rounded and persistent.

Food pairing: It pairs perfectly with any of Claramunt’s extra virgin olive oils and is ideal for accompanying salads, soups, mature cheeses, roasted vegetables and meats.

Claramunt Oil is the result of years of experience and a family’s passion for olive cultivation. This signature extra virgin olive oil is produced through meticulous care of the fruit and extensive technical expertise.

Joaquín Claramunt, a trained agronomist, returned to Baeza to embark, alongside three generations of his family, on a venture dedicated to his father: Salvador Claramunt. Thus began a daily grind of hard work on their plantations, situated on the slopes of the Sierra Mágina (Jaén).

Driven by good practice and the quest for constant improvement, they have managed, through the application of environmentally friendly techniques, to transform part of the olive grove into an intensive plantation and produce four different varieties of extra virgin olive oil: Picual, Arbequina, Frantoio and Koroneiki. A real challenge for the Claramunt team, given that they are in a region where Picual is the traditional and overwhelmingly predominant variety.

Their high standards mean that production is limited. They use only the fruit shaken loose by the first vibration, without striking the trees, so that only fruit in perfect condition enters the press. They guarantee exhaustive production control and care for the product throughout the entire process.

Furthermore, Claramunt extends this attention to detail to the bottling process, using very special packaging: elegant bottles featuring illustrations inspired by the works of the great Spanish artists of the 20th century. This highly exclusive design is intended to highlight the distinctive qualities of each of its single-varietal wines and offer a truly unique experience.
