Characterised by an intense amber colour with mahogany tones. With an acetic perfume, it includes hints of dried fruits and notes derived from its ageing in wood. Its vinous, full-bodied and perfectly balanced flavour is reminiscent of the base wine from which it comes.
Ingredients: Sherry Vinegar, caramel coloring (E150d), antioxidant: sulfur dioxude (E220).
José Páez Lobato is a family-run Andalusian company that has been producing sherry vinegar for over 60 years. Its sherry vinegar is made using the traditional "Criaderas & Solera" method, like the great wines of Jerez-Xérès-Sherry.
As in any wine region with a long tradition, sherry vinegar has always been a constant companion. For decades, José Páez Lobato has applied his knowledge to trying to understand and help nature in its slow process of transforming grape juice into high-quality sherry vinegar.
The slow, painstaking process of making Capirete sherry vinegar gives it exceptional characteristics, including its mahogany color, delicate, fine aroma and excellent, unrivalled flavor. This is due to prolonged aging in American oak barrels. A few drops of Capirete sherry vinegar are enough to transform food into a feast for the senses.
The company is registered with the Regulatory Council of the "Vinagre de Jerez" protected designation of origin, the only body to certify the authenticity of these vinegars.
