Organic extra virgin olive oil of the Cornezuelo variety produced in Jaén.
On the nose, it has herbaceous and fruity notes, dominated by green apple, green banana, artichoke and almond. Secondary aromas include citrus notes reminiscent of lemon leaves.
Its flavour is very elegant and complex, with a pleasant entry on the palate, recalling the same olfactory perceptions and in particular the astringency of artichoke, characteristic of Cornezuelo olives. Very slight bitterness and fiery burn more typical of varieties such as Hojiblanca, revealing itself with a later character.
This oil is complex, exuberant and surprising.
Recommended uses: bread, vegetables (asparagus, artichokes), mature cheeses, mature fish (Japanese cut, Peruvian ceviche).
