Carnaroli rice is a type of husked, medium-grain rice belonging to the Japonica variety. It is considered one of the best rices for making risotto because of its creamy texture and delicious flavour.
It takes around 25 minutes to cook, and absorbs flavours well while remaining firm.
Carnaroli rice is also appreciated for its balance between absorbency and minimal starch loss during cooking. To prepare a risotto with this rice, it is advisable to add the stock gradually to maintain a juicy consistency but never submerge it in the liquid. Stir constantly at the start of cooking and less frequently thereafter, to achieve a creamy consistency at the end.
