DESCRIPCTION:
Pappardelle is a type of pasta that is very popular in central Italy, mainly in Tuscany, Umbria, Lazio and Emilia Romagna.
They are similar in shape to tagliatelle, but are much wider. Pappardelle with egg and durum wheat have a rough surface, making them perfect for holding sauces. They are traditionally served with game-based sauces, such as wild boar ragout, or mushrooms.
Recommended cooking times are 9 to 11 minutes for durum wheat pappardelle and 5 to 7 minutes for egg pappardelle.
The Rustichella d'Abruzzo brand offers lemon pappardelle made with high-quality durum wheat semolina, fresh eggs and lemon juice added to the dough. Their incomparable texture is achieved by bronze stretching and low-temperature drying.
We recommend these lemon pappardelle with wild boar ragù, bottarga, truffle slivers and a drizzle of INTOSSO PrimoGrano Rustichella extra virgin olive oil, or with white sausage ragù accompanied by fresh radicchio and a drizzle of Pecorino d'Abruzzo cheese.
