Fregola tostata is a Sardinian speciality, made from durum wheat semolina and water. The pasta is rubbed into a large earthenware dish and then roasted in the oven.
It is often accompanied by clams or seafood, and can be used in soups, summer salads or vegetable stews. The traditional recipe also suggests preparing them with roasted courgettes, cherry tomatoes and spiced olive oil.
Fregola is known for its deep yellow colour, obtained by mixing it with water and saffron. It is prepared by hand, giving it an irregular shape.
Recommended cooking times vary from 14 to 17 minutes.
