Extra virgin olive oil from Bailén (Jaén), made with olives of the Picual variety.
Bright green colour, with intense fresh olive fruitiness and a great complexity of herbaceous and fruity aromas, in which green banana, almond and green tomato stand out.
The oil has an intense, complex green fruitiness, with clear aromas of tomato (a characteristic flavour of the picual), apple, freshly cut grass, green banana, green almond, etc., and without doubt what characterises this oil is its very pleasant bitter-spicy balance. On the palate, it is soft and leaves a sensation of greenness and freshness.
We recommend using it raw, whether in cold, warm or hot foods, such as: salads, bread and oil, carpaccios, vegetables, fish or meat cooked by steaming, grilling or baking, but always afterwards, so that the raw oil in contact with the hot food brings out all its phenolic compounds (the source of the flavour), and allows us to enjoy the oil as an additional food in the configuration of the dish.
