This condiment is a combination of Arbequina olive oil and natural black garlic, which adds a mild, highly aromatic flavour. Black garlic, originally from Japan but produced here, is milder than the usual white garlic. Thanks to its natural fermentation, it loses its strong odour and develops a delicious taste, also known as umami.
It has the same antioxidant, antibiotic and anti-inflammatory properties as white garlic. Black garlic is widely used in professional cooking and can be combined with Valderrama Arbequina oil to create a stable, aromatic and extremely healthy product. This combination helps to reduce cholesterol, blood pressure and blood sugar levels, while also having an energising effect. Black garlic olive oil has a pronounced garlic and liquorice flavour, making it an ideal choice for flavouring chocolate or cocoa emulsions.
