This extra virgin olive oil from Priorat (Tarragona, Spain) is a single variety of the Arbequina variety.
Its profile is balanced and complex, with a clearly identifiable fruity green olive flavour. It has a range of secondary vegetal aromas, including green grass and green nuts, almond, green tomato, fennel and ripe banana.
On the palate, it has a slightly almondy taste, combining sweet and bitter nuances. Its slight bitterness does not interfere with the oil's initial profile.
Uses: raw, in salads or on hot, freshly prepared dishes (fish and meat). The non-dominant nature of its aromatic profile means it can be used in a variety of preparations, where the overall flavour is more important than that of the oil.
