DESCRIPCTION:
Saffron Gourmet of High Quality with an intense flavor, aroma, and color. Made with raw materials from around the world selected under strict quality control, using traditional processes to carefully handle each strand and preserve all the qualities of saffron.
It is the most desired saffron in the world due to its unique characteristics. It has a high coloring power, intense, strong, and exotic aroma, and a slight bitter taste. From each bulb, between October and November, one to three flowers emerge in a color ranging from lilac to purple.
They are composed of an ovary from which three yellow stamens and a white filament, the style, emerge, which divides into three strands or red stigmas: the saffron threads. Saffron from La Mancha is clearly distinguished from others because the red stigmas clearly stand out from the flower and the style is shorter. Saffron from La Mancha is exclusively marketed in threads, never ground. The threads are flexible and resistant with bright red stigmas.
Organoleptic Characteristics: Toasted, intense, and penetrating smell, along with a slight aroma of harvested or dried fine grass with floral reminiscences. In infusion, it provides a long and smooth olfactory sensation, slightly bitter. The production process, which involves slow roasting instead of sun-drying, in addition to the species' own characteristics, is responsible for its intense aroma and higher content of safranal and coloring power.
Ideal for all types of stews and rice dishes. Crush the threads in a mortar and dilute in the stew 10 minutes before finishing cooking. It can also be infused in a glass with a little boiling water, left to steep for at least an hour, and the infusion used directly.
