The "Saba": the must of the local grapes is cooked in the open air for many hours, concentrating it until it becomes particularly sweet and dense.
It traditionally goes well with cheese and because of its sweetness it has been rediscovered for use in ice creams, creams and ricotta-based desserts.
Modena's balsamic vinegars depend on three conditions: the choice of grapes, the quality of the containers and the weather.
The heart of production is a 600-barrel "acetaia" dating from the 18th and 19th centuries, the source of the incomparable aroma of all Giusti balsamic vinegars.
