The mustard manufacturing process
The seed undergoes a soaking phase in a dilution liquid composed of vinegar, salt and water, today known as verjus. Originally, verjus was the juice of the unripe grape that was first used in the manufacture of J. NAIGON mustard, as a replacement for the strong vinegar used up to that time.
