Extra virgin olive oil produced in Íllora (Granada) mainly with the Picual, Lucio (a local variety typical of the area), Hojiblanca and Picudo varieties.
It is a noble oil, where the body and character, provided by the Picual and Hojiblanca varieties, are nuanced by the presence of the Lucio and Picudo varieties.
Recommended uses: In fried and raw foods, salads, toasts, as well as to enhance the flavour of a good grilled fish or meat.
Since 1895, the Roldán family has maintained the olive oil industry.
In its early days, it was born as a maquila, moulting the olive that was usually delivered by the reapers of the same family who produced for their own consumption, sale or barter.
